Abstract:ABSTRACT: Sixty-six mixed sex were orally dosed with trichina-infected ground rat tissue to achieve a target level of 880 larvae/kg body weight at slaughter. Three lots of 22 each were fed to achieve live weights of 97.3, 113.4 and 128.4 kg which yielded small, medium and large hams weighing 8.5, 9.7 and 11.1 kg, respectively. Short-cure hams were bag-cured at 2.2°C for 3 day/kg ham. Twelve large hams were bag-cured with 4.5% NaCl in one application. After curing, the paper was removed and the hams equalized on the same schedule as the short-cure hams. Short-cure hams were dried (aged) at 10, 23.9 and 32.2°C for 90, 35 and 11 days, respectively, while the bag-cure hams were aged at 23.9°C for days. Five muscle groups from each ham were dissected and ground separately for subsequent chemical and bioassay analyses. Samples were digested to determine for the presence of trichinae after pepsin digestion. Following aging, extremely low counts of trichina cysts were recovered from small hams aged at 23.9 and 32.2°C as well as from large hams aged at 32.2°C. Trichina larvae in small hams held at 10 and 23.9°C for 90 and 35 days, respectively, were rendered non-infective. Medium hams, however, were found to contain a small number of viable trichinae after 90 days of aging at 10°C. Bag-cure hams aged at 23.9°C for 23 days were free of trichina larvae.
