| Summary: | Abstract: A reference text for developmental nutritionists, clincial immunologists, and other health care researchers and practitioners presents 14 chapters dealing with various aspects of the associations between nutritional status and immune function. The text starts with an introduction addressing the potential impact of nutritional factors on immune responsiveness, followed by several chapters concerning the evaluation of immune function and nutritional assessment. Next, classical observations on malnutrition and infectious disease are reviewed, involving both field studies and specific studies of the effect of nutrition on immune ontogeny. Separate chapters deal with the effects of dietary intakes of calories, proteins, lipids, minerals, vitamins, breast milk, and alcohol on immunity status. The text closes with a detailed review of the potential for nutritional modulation in treating immune dysfunction and an assessment of future research needs and directions. Special attention is given to experimental animal model studies aimed at identifying specific nutrition-immunity interactions. The text includes numerous illustrations and tables, and cites over 1000 publications dealing with the subject. |
