| Summary: | "Culinary Claims: A History of Indigenous Restaurants in Canada is a study of culinary tourism, focusing not on eating establishments intended by and for Indigenous communities but rather on how Indigenous food has been represented to outsiders. As dining out has become an increasingly important economic sector and leisure activity in the post-World War II era, restaurants have become sites of cultural exchange and expressions of identity. In asking what foods have come to be seen as Canadian, Indigenous, or both, the author explores arguments over Indigenous contributions to a national culture that had previously been perceived through an Anglo-French lens. The manuscript narrates the histories of about fifteen restaurants, mostly operating from 1970 to the present, and uses these stories to explore important themes, including authenticity, cultural exchange, and sovereignty, as well as iconic and contested dishes, from bannock and beaver to salmon and seal. The author offers a clear thesis: "Through readings of material and visual culture--from restaurant interiors to their menus, dishes, and reviews--Culinary Claims asserts that restaurants not only represent politics and identities but also shape and enact them."
