Abstract:This book has 19 chapters focusing on the beneficial effects of the consumption of fruits and vegetables on human health. Some of the most common fruits and vegetables, their biologically active constituents and their medicinal properties are discussed. Some methodologies used for the extraction, isolation, characterization and quantification of these biologically active compounds and evaluation of their in vitro and in vivo activities are also presented.
