Summary:Purpose: The purpose of this study was to examine the differences that exist between pre - and post-test as they related to food preparation, food purchase and health status of participants enrolled in the Families First: Nutrition Education and Wellness System (FF NEWS) Program in Texas. Methodology: The sample population of this study was Food Stamp recipients or low income individuals who represented three ethnic groups: African American, European American and Hispanic enrolled in the FF NEWS Program between October 1998 and May 2000 ([N] = 66). The study was conducted in Fort Bend, Harris, Travis and Washington counties. Descriptive statistics were used to report personal characteristics of the participants. Comparative techniques were used to measure knowledge gain and effectiveness of the participants between pre-and post-tests as they related to age, ethnicity, education and gender. Major Findings: The major findings of the study were as follows: 1. The FF NEWS program resulted in significant positive changes in food purchasing and food preparation practices of participants and a positive "trend," though not statistically significant, in health status. 2. The majority of the participants were in the 31 to 46 age group, and many had teenagers living in the household. 3. A significant number of senior adults enrolled in the FF NEWS Program, and more females participated than males. 4. Hypertension (high blood pressure) was the chronic disease most prevalent in participant households. 5. Referrals were the method most effective in recruiting participants for the FF NEWS Program. 6. The culturally sensitive curriculum was a significant factor in individual participation and positive behavior changes. 7. A majority of the FF NEWS participants were African American.
