520 3 |a Twenty-five steers of each of three breed-types--Angus, Brahman and F(,1) Brahman X Angus--were selected, sorted by frame size and muscling, assigned to groups to be fed 0, 56, 112, 168 or 224 days, slaughtered and compared for various growth, development and carcass traits. In general, few differences in feedlot performance were found. Steers of each breed type had similar dressing percentages. Carcasses from all three breed-types merited similar quality and yield grades. These data suggest that breed differences in quality grade are small and nonsignificant if cattle are fed long enough for all three breed-types to express their inherent potential to deposit marbling. Carcasses from Angus steers appeared to be more muscular than those of Brahman steers at 4 of 5 times on feed; this was an apparent but not real difference. When actual muscle-to-bone ratios were computed, no breed-type differences were found. Differences were found in the fat deposition patterns exhibited by the different breed-types. Brahman steers tended to deposit more fat, as a percentage of total fat, subcutaneously early in the feeding period. Angus steers had more seam fat as a percentage of carcass weight at all 5 feeding periods and more internal fat at 2 of the 5 feeding periods than Brahman steers. Brahman steers had a higher percentage of their separable lean in the round than did the other two breed-types. Regression analyses were performed to determine the degree of accuracy with which measurements taken on certain muscles and on the femur could predict percentages of carcass separable lean and bone and muscle-to-bone ratios. The USDA yield grade equation was shown to be a valid indicator of differences in percentages of carcass lean among carcasses of all three breed-types.
